Shane Delia's Spice Journey: Turkey

Episode 3 airs at 7.30pm on SBS ONE

Shane on bechamel's brother, mastic pudding: "You know the creamy sauce on lasagne? It has basically the same ingredients: butter, rice milk, flour and he's put some mastic and sugar in there to finish it off. Mastic is a natural plant gum, almost exclusively from the Greek island of Chios, but mastic pudding is a Turkish invention."

Luke Nguyen's United Kingdom

Episode 7 (Isle of Bute, Scotland) airs at 8pm on SBS ONE

Luke on the local crustacean: "With the depletion of fish due to years of over-fishing, the large number of langoustine in these waters is a welcome sight for local fishermen. Only four small trawlers are licensed to operate near the coast."

Heston on the famous fried food: "Fish and chips are a British institution. Winston Churchill called them "The good companions" and 14 million of us visit the chippie every week."

In Search of Perfection - series 2

Episode 7 (Risotto) airs at 6pm on SBS ONE

Heston on a thing called 'acidulated butter': "You've always got a problem when making risotto, to toast the rice and have the onions cooked. By making an onion-flavoured butter, acifified with vinegar and wine, you're taking out that problem. You don't need the onions because you're bringing the onion flavour through the butter. "
