Shane on bechamel's brother, mastic pudding: "You know the creamy sauce on lasagne? It has basically the same ingredients: butter, rice milk, flour and he's put some mastic and sugar in there to finish it off. Mastic is a natural plant gum, almost exclusively from the Greek island of Chios, but mastic pudding is a Turkish invention."

Heston on a thing called 'acidulated butter': "You've always got a problem when making risotto, to toast the rice and have the onions cooked. By making an onion-flavoured butter, acifified with vinegar and wine, you're taking out that problem. You don't need the onions because you're bringing the onion flavour through the butter. "
