Perfect for Australian winter parties: Hara bhara kebab

A healthy & delicious Indian vegetarian snack made with spinach, fenugreek, mint, potatoes and green peas.

Ingredients

  • 1-cup spinach leaves (blanched)
  • 1-cup fresh fenugreek leaves (blanched)
  • ¼ cup fresh mint leaves (finely chopped)
  • ½ cup finely chopped green capsicums
  • ½ cup grated paneer
  • ¼ cup fresh coriander (finely chopped)
  • 1 cup green peas (crushed)
  • 1 tbsp ginger (finely chopped)
  • 1 tbsp green chillies (finely chopped)
  • 1 tbsp cumin powder
  • ¼ tsp turmeric powder
  • 3 tbsp cornflour
  • 3 tbsp breadcrumbs
  • 2 tbsp sugar
  • Salt to taste
  • ½ cup boiled and mashed potato
  • Oil for frying

Method

  • In a pan add 1-2 tbsp of oil.
  • Add capsicum and cook for 2-3 mins.
  • Add turmeric powder and cook for another min.
  • Add spinach, fenugreek, mint, coriander, ginger, green chilli, peas, cumin powder, salt and sugar and cook till the mixture goes dry.
  • Turn off the heat and let the mixture completely cool.
  • Transfer this mixture into a mixing bowl after its cooled; add paneer, cornflour, breadcrumbs and mashed boiled potato.
  • Mix everything into dough like consistency.
  • Make small tikkies from the dough and deep-fry the tikkies till golden brown.
  • Serve hot with tomato sauce and green coriander chutney.
