Try: Famous Kashmiri lamb curry, Lamb Rogan Josh

Rogan means clarified butter in Persian, while Josh means hot or passionate. Rogan Josh thus means meat cooked in clarified butter at intense heat. Recipes vary widely across different regions and traditions, but all include lamb or goat, oil or ghee and a mixture of spices.

Ingredients

  • ¼ cup Oil
  • ¼ cup ghee
  • 2 sticks of Cinnamon
  • 5 to 6 Cloves
  • 4 black cardamom
  • 2 bay leaves
  • 3 cups of slices onion
  • 2 tbsp ginger garlic paste
  • 1 kg lamb pieces
  • 2-3 cups of water
  • Salt
  • 3 tbsp Kashmiri red chilli powder
  • 1 tbsp Rogan josh paste
  • 1 tbsp of fennel powder
  • 1 tbsp ginger powder
  • ½ cup yogurt

Method

  • In a pan add oil, ghee, whole spices cinnamon, cloves, black cardamom, bay leaves and sliced onion.
  • Cook till the onion turn brown.
  • Add ginger garlic paste.
  • Cook for about a min.
  • Now add the lamb pieces, salt and water.
  • Simmer till the lamb is cooked half way.
  • Add Kashmiri red chilli powder, funnel powder, ginger powder, yogurt and Rogan josh paste.
  • Simmer till the lamb is cooked all the way.
  • Serve with rice/Naan.
