Recipe: Noni Sachdeva
Ingredients
- 1 kg chicken thigh (cut into cubes)
- 3 tbsp oil
- 2 bay leaves
- 1 cup finely chopped onions
- 2 cups pureed tomatoes
- 1 tbsp ginger garlic paste
- Salt to taste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- water as required
- 1 cup one inch square chopped green capsicum
- 1 cup one inch square chopped red onion
- 1 tbsp of the coarse kadhai masala powder
- ½ cup fresh chopped coriander
Kadai Masala powder
- 1 tsp Jeera seeds (cumin seeds)
- 1 tsp whole Black pepper
- 2 tsp whole coriander seeds
- 1 whole dried red chilli
Method
- To make kadai masala powder, grind jeera seeds, whole black pepper, coriander seeds and whole dried red chilly into a coarse powder.
- Keep this ready to add to the masala mixture.
- Heat some oil in the pan, add bay leaves, onion, ginger garlic paste and let it cook till onions turn translucent and brown in colour.
- Add tomato puree, kadai masala powder, salt, turmeric, red chilly powder, coriander powder, cumin powder and cook till tomato is fully cooked.
- Now add chicken pieces with some water (if needed) mix and cook till the chicken is about 3/4 cooked.
- Add fresh chopped coriander, onion, and green capsicum.
- Cook till the chicken is fully cooked.
- Enjoy with some tandoori roti.
