Pushpinder Oberoi, a renowned hotelier and hospitality pioneer, believes that Indian food goes far beyond butter chicken. One of the early champions of the tandoor in Australia, he has spent decades bridging flavours and traditions between Punjab and Australia. Married to a New Zealand woman, he also compares Australian barbecue culture to the Indian tandoor.
