Rachel Khoo's Kitchen Notebook: Cosmopolitan Cook

Episode 9 (Nice) airs at 7.30pm on SBS ONE

Rachel on a Niçoise specialty: "I've just ordered a socca, which is very typical of this region. It's kind of like a pancake or a pizza, but made with chickpea flour. The dish goes back centuries. There's an art to getting the pancake crispy and charred on the outside, and soft on the inside. "

Episode 3 (Wiltshire, Hampshire and Devon) airs at 8pm on SBS ONE

Luke on fresh food in the UK : "Just 45 minutes out of Salisbury is the Winchester Farmers' Market. Extremely popular, it's acclaimed as one of the biggest in England. There are tarts with rocket, red onion and goat's cheese, strawberry tarts, fruity brioche, hot pork rolls, hog roast rolls, cherry jam from the Isle of Wight, fish cakes, smoked fish and spring vegetables of every description."

Heston on determining a good duck: "The key thing here is to get a duck where the flesh is tender, juicy and moist, and the skin is wonderfully crisp. Thin, but really crisp, so it shatters when you bite into it. "
