Shane Delia's Spice Journey - Turkey

Episode 4 airs at 7.30pm on SBS ONE

Shane on making better beans: "This is the  most important part of the fava (broad bean). A lot of people take a short cut here and they'll just boil the hell out of it, chuck it in a food procesor to purée it. But you really want to whisk it and slowly let all the vegetables in there break up and become one."

Episode 8 (Edinburgh, Scotland) airs at 8pm on SBS ONE

Luke on top notch Scotch: "In Tokyo, they like to drink their whisky diluted with lots of water and in Madrid, they mix it with cola, and in New York, they shake up some amazing cocktails. I'm here at the Balmoral Hotel to meet a tartan butler, to show me how the Scots do it."
