Rachel Khoo's Kitchen Notebook: Cosmopolitan Cook

Episode 7 (Naples) airs at 7.30pm on SBS ONE

Rachel on a necessity in Naples: "So the local speciality here is sfogliatelle - delicate pastry, crisp and filled with ricotta, some candied fruit and a little bit of semolina flour. Sfogliatelle means 'tiny thin leaves'' and that's the magic of this adorable, delicate pasty."

Luke Nguyen's United Kingdom

Episode 1 airs at 8pm on SBS ONE

Luke on eating on your feet: "I absolutely adore street food, whether it's on the footpaths of Hanoi or the rear back lanes of Burma. For me street food is king and it's taken on the restaurants in offering affordable, excellent food in a really buzzing, exciting environment, and in London, street food is taking on the big boys."

Heston gets hot and steamy in India: "Now at my restaurant the kitchen gets pretty hot, but this was ridiculous. By 10am the it was pushing 56ºC. One major contribution to the mercury rising was a bank of charcoal-fired tandoori ovens."
