Looking for some 'grate' ideas for hash browns? Look no further. Pan-fried discs of grated potato take on a golden, crunchy identity that you can enjoy as a side, or with toppings as a meal in itself. Here are some favourites ways to make hash browns (and even a fun idea for using store-bought hash browns: the hash brown waffle!)

Adam Liaw's quick hash brown waffles

This is so simple it seems like it shouldn't work so well or taste so good, but as Adam Liaw says on The Cook Up, "trust me, you'll be amazed". Leftover hash browns (or use purchased frozen hash browns) are smushed into a hot waffle iron and cooked until golden, then topped with sour cream and a touch of Japanese mayonanaise, chilli crisp and furikake. It's easy, delicious comfort food.

Root vegetable hash browns with boiled eggs

Potato is the most common staple used for hash browns, but other root veg can make a great alternative. In this recipe, Justine Schofield uses sweet potato to create these little parcels that are crunchy on the outside and soft in the centre, but you could use other root vegetables, too.

Tray-baked leek and potato hash brown

Hash browns are usually pan-fried but in this recipe, they get the tray-bake treatment, flavoured with leek, spring onion and dill. It's a great way to cook up enough golden, crisp-topped potato to feed 6-8 people.

Potato pancakes with spicy sesame sauce (gamjajeon)

Hash browns hail from America, but of course other countries make similar and delicious pan-fried potato cakes too. These Korean potato pancakes are a crisp, crunchy-edged delight, served with a spicy sesame sauce.

Corned beef hash

If you love hash browns and corned beef, this recipe from Matthew Evans might be your ultimate comfort food. It straddles the hash-rösti-latke divide. What's that, you ask? Generally, hash browns (an American favourite) are small to medium sized, and made with grated potato. Latke, a Jewish favourite, also use raw grated potato and usually include eggs or flour, while rosti are often made with pre-cooked ptoato (like Matthew's recipe) and cooked as one large pancake. But no matter where this recipe sits in the pantheon, it's a great way to use up corned beef. Serve with eggs, roasted mushrooms or other toppings for a hearty meal.
