Great for lunchbox: Chicken tikka egg roll

Kathi rolls are very popular in India. Try our chicken tikka egg roll which makes for great lunch box food too.

Ingredients

For marination 

  • 1 kg chicken thighs (cut into 2 inch pieces)
  • 1 tbsp ginger garlic paste
  • 1 tbsp red chilli powder
  • ¼ tbsp turmeric powder
  • 2 tbsp tikka masala powder
  • 1 cup yogurt
  • Salt to taste
  • 1 tbsp oil
  • 1 tbsp lemon juice

For the roll

  • 4 home made roti / alternatively use wraps
  • 1 cup red onion (sliced)
  • 4 eggs
  • ½ cup coriander chutney
  • 4 tbsp lemon juice
  • 2 tbsp chaat masala
  • 2-4-tbsp Oil

Method

  • In a bowl add yogurt, salt, lemon juice, oil, tikka masala powder, turmeric powder, red chilli powder and ginger garlic paste.
  • Mix it. Add chicken pieces.
  • Mix and marinate 2+ hours.
  • Soak some wooden skewers in water for 2+ hours too.
  • After marination, thread the chicken on the woken skewers and cook in the oven for 25-30 minutes on 180 degrees.
  • Once cooked keep chicken aside. 
  • Now in a pan on medium heat add oil.
  • Once the oil is hot, break open an egg and spread it all around the pan.
  • Once the egg is about half cooked place a home made roti on top of the egg.
  • Once the egg is stuck to the roti take it off the pan and now we can assemble the roll.
  • Place some chicken on the roti (egg side up), some red onion, chaat masala powder, lemon juice and coriander chutney.
  • Roll the roti and serve.
  • Cook the rest of the rolls the same way.
  • Enjoy.
