Food for soul: Dal Makhani

One thing always guaranteed to melt the heart of everyone at your table is Dal Makhani. Young and old are bound to love this traditional Indian dal recipe loaded with 'makhan'.

Ingredients

  • 1 cup whole urad/ black gram dal (boiled)
  • ¼ cup Rajma/red kidney beans (boiled)
  • 1 tbl ghee
  • 1 ½ cup onion (finely chopped)
  • 2 cups tomato pureed
  • 1 tbl ginger garlic paste
  • ¼ tbl turmeric powder
  • 1 tbl red chilli powder
  • 2 tbl Garam masala powder
  • Salt to taste
  • Urad dal water (left from boiling)
  • 1 tbl cream

Method

  • Soak whole urad and rajma in water overnight.
  • Then pressure cook it and keep ready.
  • In a saucepan, add ghee and onion cook till the onions turn light in colour.
  • Add ginger garlic paste and cook for about 1 min.
  • Add tomato puree, turmeric powder, red chilli powder, salt, garam masala powder and cook till oil separates from the masala.
  • Add boiled whole urad, rajma and urad dal water to get the desired consistency.
  • Let this come to a boil and add cream.
  • Cook till dal thickens.
  • Serve hot.
  • Garnish with some fresh ginger.
